Earlier this month I was invited by John Lewis to come and create a magic smoothie concoction at their studio kitchen in Old Street. We were treated to a talk by the gorgeous Maddie Shaw about her healthy habits and her go-to smoothie ingredients.
There was a beautiful spread of healthy fruits, nuts and spices to choose from to make our smoothies. I always try to use local ingredients and fruits that haven’t had to travel hundreds of miles. Yep – that means I don’t buy pineapple or mango when I’m in London. I save those luscious fruits for my tropical climate holidays.
On the night of the event I was craving something sweet so I created a dessert smoothie. It’s creamy and smooth yet still dairy-free, vegan friendly and paleo.
You can give my recipe a try at home:
1 – 2 Organic Medjool Dates
1 x handful of cashew nuts
8 x Rasberries
4 x Pecans
1 x Teaspoon Chia Seeds
1 x Tablespoon Cold Pressed Organic Coconut Oil
1 x Sprinkle of Cinnamon to taste
1 x Pinch of love
250ml Coconut or Rice Milk
If you do have time, soak the cashews overnight. If not, they will still taste good using non-soaked nuts.
Blend all ingredients until creamy and add more liquid if needed.
Served chilled with an optional sprinkle of cinnamon.
If you don’t have a blender or smoothie maker, John Lewis have a huge range available in-store and online. I’m a big fan of the nutribullet but if I needed to buy a new one, the Smeg retro smoothie maker is super cute.
